- Viticulture: Certified organic (Ecocert, 2018), biodynamic (Demeter & Biodyvin, 2019). No synthetic products, cover crops planted in early fall, 500 and 501 preparations, Single-Guyot pruning, average of 6,500 vines/ha.
- Vinification: Pressed with whole clusters, ambient yeast fermentation, spontaneous malolactic fermentation (though it usually doesn't take place), aged for 6-24 months on the lees, no fining or filtration.
