  • Terroir: From the lieu-dit La Butte de la Roche in the village of Le Loroux-Bottereau, on the top of a hillside overlooking the Goulaine river marsh, on a bedrock of peridotite and altered serpentinite.
  • Viticulture: Certified organic (Ecocert, 2018), biodynamic (Demeter & Biodyvin, 2019). Massale selection plantings.
  • Vinification: Pressed with whole clusters, ambient yeast fermentation, aged for 20+ months in 600 L barrels, concrete tank, and underground glass-lined tank, no racking during aging, no fining or filtration.
