• Vinification: Sorted in the vineyard and with a sorting table, 100% de-stemmed, 4-week ambient yeast fermentation and maceration with pump-overs, pressed with a vertical press, aged for 7-12 months in used barrels, blended and aged for an additional 7 months in tank, no fining, no filtration.
