• Vinification: 100% whole cluster, 2-week ambient yeast fermentation in wooden tank, daily pump-overs with a few punch-downs at the end of fermentation, pressed with a vertical press, aged for 6 months in tank followed by 2 months in 228 and 600 L barrels, no fining or filtration, SO2 added after malolactic fermentation and before bottling.
