- Viticulture: Biodynamic (not certified), trees planted before 2006: isolated in high wind, trees planted after 2006: vertical axis-trellised, yields approx. 10 tons/ha.
- Vinification: Varieties harvested together in passes to collect fruit that has naturally fallen (no shaking), double sorted; once in the vineyard and once with a sorting table, washed, crushed, and pressed with a band press, natural clarification and sedimentation, 6-month cool-temperature ambient yeast fermentation and aging for 4 months on the lees in stainless steel tank, no added SO2.
