• Terroir: Eastern exposure, in a large valley at the base of the Roche de Vergisson, Jurassic-era red soil and limestone rocks.
• Viticulture: Organic (Ecocert), biodynamic (Demeter), plowed by horse.
• Vinification: Pressed with whole clusters, ambient yeast fermentation. Aged 11 months in barrels (8-10 year old oak) and another 6 months in tank. "Zen" cuvée with only 10-20 mg/L added SO2 since 2019.
