• Variety: Chardonnay
• Vine Age: About 35 years old
• Terroir: Les Vireuils Dessous, east/ northeast facing, 300-320 m elevation, 40-60 cm deep soil of brown limestone with rocks.
• Vinification: Double-sorted on a vibrating table and a sorting table. Pressed with whole clusters, cold settled. Minimal SO2 addition to the musts. Ambient yeast fermentation and aging for 12 months in used barrels, rarely stirred. Racked, blended, and aged another 6 months in stainless steel tank. No fining and gentle filtration if necessary.
