  • Viticulture: Organic (AB, 2011), biodynamic practices, cover crops, minimal copper with the use of plants and essential oils.
  • Vinification: De-stemmed, long ambient yeast fermentation and maceration with a few punch-downs in open top tanks, aged for 18-22 months in concrete tanks, no fining, no filtration.
