- Terroir: Clay-limestone soil with rounded gravels and cobbles from the alluvial deposits of the Tarn river. 220m altitude.
- Viticulture: Organic (AB, 2011), biodynamic practices, cover crops, minimal copper with the use of plants and essential oils, plantation density of 5,000 vines per ha.
- Vinification: De-stemmed, pressed, ambient yeast fermentation and malolactic fermentation in sandstone amphora and stainless steel vats, aged for 10 months on the lees in amphora and 500L barrels.
Additional Info
Bouysselet is a local white variety that was rediscovered by Château La Colombière only a few years ago on a small patch of pre-phylloxera vines. Its parents are Savagnin (Jura) and Plant de Cauzette (Béarn).
