  • Vinification: Hand harvested, manually sorted and left to further ripen for 2-12 weeks, washed, crushed, pressed, and settled, 5+ month ambient yeast fermentation in tank with added rhubarb, bottled in spring and re-fermented with a very small dosage of sugar for 3 months, no fining, filtered only when required, no added SO2.
