    • Varieties: A blend of bitter, bittersweet, sweet, and tart apples.
    • Sweetness: Extra-brut
    • Terroir: From the communes of Lannion and Perros Guirec, south and southwest-facing, 10-50 cm deep sand and silt soil with many pebbles, granite bedrock.
    • Viticulture: Organic (AB)
    • Vinification: Hand harvested, manually sorted and left to further ripen for 2-12 weeks, washed, crushed, pressed, and settled, 5+ month ambient yeast fermentation in tank, bottled in spring and re-fermented with a very small dosage of sugar for 3 months, no fining, filtered only when required, no added SO2, no residual sugar.
