The name of this cider, literally meaning "About Wings" is a French play-on-words: as ailes (wings) and elles (they, female) sound the same. Jacques is referencing the feminine and ethereal qualities of this high-end, limited production cuvée.
The Tobiässler apple is a rare variety that originated in Basselland, Switzerland. Officially identified in 1805, it has firm, crisp, greenish pulp with higher acidity and complex aromas.
À Propos D'Ailes 2015 Tasting Notes: With notes of saffron, cardamom, cloves and honey, the balance of acid, sugar, and bitterness is impeccable. With both incredible length and freshness, this cider is ideal for gourmet events, spicy dishes, or dessert pairings.
