    • Vinification: Pressed, settled, ambient yeast fermentation in tank, aged for 11 months in used barrels, full malolactic conversion, blended and aged for an additional 9 months in stainless steel tank, lightly fined with bentonite, SO2 added before bottling (50-70 ppm total).
