- Terroir: From the lower and upper sections of the Clos de l’Ecotard, clay soil with outcrops of limestone bedrock.
- Viticulture: Biodynamic (Demeter), 8,000 vines/ha.
- Vinification: Picked later than the rest of the Clos de l’Ecotard. ⅓ Vin de Paille: from the top section of the Clos with grapes that have naturally begun to dry out, grapes dried with the passerillage method for 5 weeks, ambient yeast fermentation and aging for 8 months in used barrels. ⅔ botrytized wine: botrytized grapes from the lower section of the Clos with less wind and higher humidity, ambient yeast fermentation and aging for 8 months in used barrels. Blended in tank before bottling, no fining, no filtration, only produced in 2020.

The Coteaux de Saumur 2020 is the result of an experiment that did not go as originally planned. Thibaud wanted to make a both Vin de Paille and a botrytized sweet wine to be able to compare the two methods and resulting wines, but it turned out that the blend was more complete.
