- Vinification: 4 cuvées from the Clos that are vinified and aged separately based on vine age. 100% de-stemmed but not crushed. 5-8 day pre-fermentation cold maceration at 13-14°C. Ambient yeast fermentation. Aged 18-24 months in used barrels. Blended before bottling.
