    • Vinification: 100% whole cluster, 4-day semi-carbonic maceration, 14-20-day ambient yeast fermentation in 10 hL steel tanks with daily punch-downs, aged for 12 months in used barrels and sandstone eggs, no fining, no filtration, SO2 added after malolactic conversion and before bottling (20-40 ppm total at bottling), bottled and aged for an additional 12 months before release.
