- Vinification: Lightly crushed before pressing, 1-week maceration, 10-20-day fermentation started with an ambient yeast pied de cuve, aged for 12 months in sandstone eggs and used barrels, no fining, light filtration, SO2 added after malolactic conversion and before bottling (20-40 ppm total at bottling), bottled and aged for an additional 12 months before release.
