- Vinification: Pressed with whole clusters, settled, ambient yeast fermentation and aging for 10 months on the lees in a combination of used demi-muids, 228 and 400 L barrels, aged for an additional 2 months in stainless steel, 40-60 ppm total SO2 at bottling.
