- Variety: Gamay
- Size: 2.0 ha (4.94 ac): 1.0 ha from the lieu dit Saint-Roch and 1.0 ha from the lieu dit Poullet.
- Vine Age: Saint-Roch: 55 years (vines removed in 2022 to be replanted in 2025), Poullet: planted between the 1960s and the 1980s.
- Terroir: On a southeast-facing slope with pink granite, sandstone and various weathered magmatic rock fragments.
- Viticulture: Organic (not certified), high-density, gobelet-trained, soil worked manually with a cable plow, hand tools and horse.
- Vinification: No SO2 added during vinification or aging, 100% whole cluster, 2-3 week semi-carbonic maceration and ambient yeast fermentation in fiberglass tank with pump-overs, aged for 9 months in tank, no fining, no filtration, minimal SO2 added before bottling (approx. 20 ppm).
