  • Viticulture: Chardonnay: purchased grapes, in official conversion to organic viticulture since 2020. Tressallier: Domaine-owned, certified organic (AB).
  • Vinification: Pressed directly, cold settled and decanted, ambient yeast fermentation and aging for 6 months on the lees in stainless steel tank, minimal SO2 additions.
