- Vinification: Some pressed immediately with a percentage of the fruit macerated on the skins for a few days. Ambient yeast fermentation. Méthode ancestrale, bottled with residual sugar. Disgorged after 12 months on lattes. No fining, no filtration, no added SO2.

In creating this natural sparkling wine, we wanted to bottle the spirit and breath of fresh air of our young domaine. A wine black as night and yet finessed, with delicate bubbles, for toasting to the beginning of a tumultuous evening.
