- Varieties: Field blend of white grapes including Noual (indigenous variety), Sauvignon, Chenin, Sylvaner, etc.
- Vine Age: Planted in 1999
- Terroir: Southeast-facing, top of the slope. Stony, shallow, clay-limestone soil. Kimmerdigian bedrock.
- Viticulture: Organic (AB), biodynamic methods
- Vinification: Some of the grapes are pressed directly and the rest undergo a 3-4 day skin maceration. Fermented gradually for 2 years with ambient yeast in old Alsatian foudres. No topping of the barrels so to allow a voile to form. No fining, no filtration. Minimal SO2 adjustment at bottling (10 ppm).
