- Terroir: From multiple plots in the Cadillac, multicolored clay with limestone inputs, soil up to 8 meters deep.
- Viticulture: Certified organic (Qualisud, 2010), Bordelaise pruning.
- Vinification: De-stemmed, uncrushed, ambient yeast fermentation, short pumpovers to limit the tannin structure, aged for 4-6 months in stainless steel tank, minimal (if any) added SO2 after vinification.
