    • Terroir: A selection from multiple plots in the Côte de Grisey. On southeast-facing, steep slopes (up to a 45% grade). Planted on thin clay-limestone Kimmeridgian topsoil, with limestone bedrock embedded with oyster fossils.
    • Viticulture: Organic (certified, 2015)
    • Vinification: 20-30% whole cluster, ambient yeast fermentation with pumpovers, aged for 8-11 months in 228 and 400 L barrels (5-20% new), SO2 added a few months before bottling, approx. 25-30 ppm total at bottling.
