• Terroir: From Le Chétillion de Haut in Mesnil-sur-Oger. Pure iodized chalk with colluvial limestone-chalk formations.
• Viticulture: Organic (Ecocert, 2022), biodynamic methods (since 2021).
• Vinification: Base wine. Briefly macerated on the skins, ambient yeast primary fermentation and full malolactic conversion, aged in used barrel, no fining, no filtration, no added SO2.
