• Terroir: From Le Mont Chainqueux in Les Mesneux, at the foot of the Montagne de Reims, southeast-facing. Silty-chalk on the lower slope, clay-sand on the upper slope.
• Viticulture: Organic (Ecocert, 2022), biodynamic methods (since 2021).
• Vinification: From a selection of the best grapes from Le Mont Chainqueux, ambient yeast primary fermentation and full malolactic conversion, aged for 8 months in used barrels, bottled and aged for an additional 44 months on lattes under natural cork, no fining, no filtration, no added SO2.
