- Vinification: Harvested ripe (around 12 degrees), ambient yeast fermentation and aging for 9 months on the lees in barrels (30% new), frequent bâtonnages from October to May, usually undergoes a partial malolactic conversion in the spring, bottled aroun 18-20 g/L residual sugar for ultra-fine bubbles, aged for 36 months on lattes before disgorgement, aged for an additional 3 months on bottle before release, brut nature.
