- Viticulture: Sustainable, this parcel is worked to limit yields and maximize concentration, producing small loose bunches.
- Vinification: Harvested ripe (around 12 degrees), ambient yeast fermentation and aging for 9 months on the lees in used barrels, usually undergoes a partial malolactic conversion in the spring, bottled around 18-20 g/L residual sugar for ultra-fine bubbles, aged for 36 months on lattes, disgorged and aged for an additional 3 months in bottle before release, brut nature.
