• Vinification: From the perpetual reserve solera which began in 1992, each new vintage is vinified with ambient yeast and aged for 9 months, 70% in stainless steel and 30% in barrels, blended with the solera wine and aged for 60-72 months, disgorged and aged for an additional 6 months in bottle before release, extra brut.
