    • Vine Age: Planted between 1948 and 1993, 50 years old on average
    • Terroir: East-facing, 30cm-deep limestone-gravel soil over a layered bedrock of brown silt and hard limestone, good water retention.
    • Viticulture: Organic (not certified), sharecropped since 1992.
    • Vinification: Pressed, settled for 24-48 hours, ambient yeast fermentation and aging for 12 months on the lees in barrels (20% new), some bâtonnage until the malolactic conversion begins, racked and aged for an additional few months in tank, fined.

    Additional Info

    In the vineyards, water can easily filter through the cracks in the bedrock, forcing the roots to plunge deep in search of water and nutrients. Soils are plowed, compost is organic, and a very careful pruning limits yields. In the cellar, François’ goal is to preserve minerality and the specific character of each appellation. About 3,120 bottles are produced of this cuvée each year (depending on vintage).
