    • Vinification: 100% de-stemmed, 10-12 day pre-fermentation cold maceration, fermentation with pump-overs (punch-downs at end of fermentation), relatively rapid de-vatting to maintain balance. Aged for 18-20 months in barrels (50-100% new).
