- Vinification: 100% de-stemmed, 18-21 day ambient yeast fermentation and maceration in stainless steel tanks with pump-overs (some punch-downs at end of fermentation). Aged 18 months in barrels (40% new).
Additional Info
This wine was first made in the 2015 vintage. However, due to low yields in the 2016 vintage, this parcel was blended with 0.25 hectares of two other vineyards (including Des Chéseaux) to make a Gevrey Village.
