- Viticulture: Biodynamic (not-certified)
- Vinification: Gently pressed for 6-9 hours with whole clusters, ambient yeast fermentation, aged for 14-15 months in a combination of 228, 350, 400 L used barrels, occasionally fined with bentonite if necessary, minimal SO2 addition in spring (approx. 30 ppm total SO2 at bottling).
