- Terroir: Clay-limesone, Bisseuil- south-facing, Mareuil-Sur-Aÿ- southwest and southeast-facing, Avenay Val d’Or- south-facing.
- Viticulture: Sustainable, organic practices in years with low disease pressure.
- Vinification: A blend of the base vintage and reserve wine, ambient yeast fermentation and aging for 9 months in 228 L barrels (0-10% new) and sometimes in foudre, spontaneous malolactic conversion, blended and bottled, aged on lattes for 18 months, no fining or filtration, zero dosage, SO2 added only during initial vinification and aging.
