- Terroir: Clay-limesone, Bisseuil- south-facing, Mareuil-Sur-Aÿ- southwest and southeast-facing, Avenay Val d’Or- south-facing.
- Viticulture: Sustainable, organic practices in years with low disease pressure.
- Vinification: From a blend of Hélène’s favorite Pinot Noir barrels of the vintage, ambient yeast fermentation and aging for 9 months on the lees in 228 L used barrels, blended and bottled, aged on lattes for 30 months, no fining or filtration, extra-brut dosage, SO2 added only during initial vinification and aging.
