Bourgogne Doudou Tu Viens

- Vinification: 100% whole cluster, 10 ppm SO2 added before vinification, fermentation started with an ambient yeast pied de cuve with white grapes, daily wetting of the cap with a bucket, punch downs after 5-7 days, pressed after 10-14 days with a vertical press, aged for 8-10 months in used barrels, no fining, no filtration, 5-10 ppm SO2 added before bottling (approx. 35 ppm total at bottling)

"Even though this is a Bourgogne Rouge, it reflects its terroir at the foot of the hill of Corton, with a little grip. 'D'où tu viens?' means 'where do you come from?' in French. I added another 'dou' because 'doudou' is the diminiuitive for Edward, a comfy blanket or a stuffed animal for kids (cute)."
