- Vinification: 100% whole cluster, 10 ppm SO2 added before vinification, fermentation started with an ambient yeast pied de cuve with white grapes, daily wetting of the cap with a bucket, punch downs after 5-7 days, pressed after 10-14 days with a vertical press, aged for 8-10 months in used barrels, no fining, no filtration, 5-10 ppm SO2 added before bottling (approx. 35 ppm total at bottling)

"This Savigny comes from an alluvial fan at the north of the Combe Rhoin on a bed of rounded cobbles and clay- a collection of loose stones rather than bedrock. Since the gravels have travelled from far up the valley, the wine is named 'Je t'ai apporté un caillou' which means 'I brought you a stone' in French."
