- Vinification: 1-week fermentation in stainless steel vats, aged for 6 months in stainless steel and/or concrete tanks, no fining, filtered with tangential flow or diatomaceous earth, SO2 added before vinification, after malolactic conversion and before bottling, 20-50 ppm free SO2 at bottling.
