  • Vinification (whites): Crushed by foot, pressed with a vertical press until the pH reaches 3.20, settled, ambient yeast fermentation and aging on the lees in barrels and clay jars, racked, minimal SO2 added when needed, bottled by hand.
  • Vinification (reds): 100% whole cluster, fermentation started with an ambient yeast pied de cuve, extraction with punch-downs, pressed before dry with a vertical press, aged in barrels and clay jars, racked twice, minimal SO2 added when needed, bottled by hand.
