- Terroir: From a steep limestone hillside outside of Saint-Aubin, overlooking the village of Gamay.
- Viticulture: Purchased grapes, organic (not certified).
- Vinification: Pressed directly, fermentation in 350 L barrels, aged for 12 months in foundre (65%) and new barrels (35%), filtered, SO2 added in increments throughout.
