- Viticulture: Farmed by Bastian but not owned, organic (not certified) with biodynamic methods, all work done manually.
- Vinification: Grapes are co-fermented, 100% whole-cluster, 2-3-week ambient yeast fermentation and carbonic maceration in tank, minimal extraction by wetting the cap with buckets and 2-3 foot treads near the end of fermentation, aged for 15-18 months in used 228 and/or 350 L barrels, blended in tank for 1 month, no fining, no filtration, SO2 only added before bottling (approx. 10 ppm).
Additional Info
Before 2023, the wine was made with 100% Pinot Noir from an isolated garden in Sainte-Marie-Sur-Ouche, on stony, shallow soil. The name of the cuvée referred to a nearby cherry tree in the garden. In 2023, Bastian switched the parcels and is now making the wine from a vineyard that he farms in Comblanchien, which conveniently also has a cherry tree planted nearby.
