    • Varieties: Gamay and Pinot Noir
    • Terroir: 50-60% Gamay from Fleurie, 15-25% Gamay from Mon Poulain in Pommard, 25% Pinot Noir from the Côte de Beaune.
    • Viticulture: The Gamay from Fleurie is purchased fruit, sustainable. The Mon Poulain parcel in Pommard is rented and farmed by Catharina, organic and biodynamic (not certified). The Pinot Noir is purchased fruit from the Côte de Beaune, sustainable.
    • Vinification: The Gamay from Fleurie is directly pressed while the rest is vinified with whole clusters, all vinified separately. Ambient yeast fermentation in stainless steel, aged for 9-12 months in used barrels, blended before bottling, minimal added SO2.

    Before 2021 the grapes only came from Pommard and the Côte de Beaune.
