    • Vinification: Ambient yeast fermentation, arrested at 10.5% abv with cold temperatures and filtration, bottled, re-fermented for 3 months with the remaining yeast and sugar, disgorged, no dosage, minimal SO2 addition after disgorgement, approx. 10-15 g/L residual sugar.
