• Terroir: From two parcels on dacite granite (unique to the Côtes du Forez, contains calcium), light, well-draining soil with low levels of clay (about 25%), 520-560 m altitude, east/southeast-facing.
• Viticulture: Organic (AB, 2001) and Biodynamic (Demeter, 2009)
• Vinification: 100% de-stemmed, 2-week ambient yeast fermentation in stainless steel tank, aged for 3-4 months in stainless steel tank, filtered, SO2 added after malolactic fermentation and before bottling (approx. 15 ppm free SO2).
