- Terroir: The two varieties are planted separately (with about 200 meters between them), but on the same terroir of volcanic rock (basalt). Southeast-facing.
- Viticulture: Biodynamic (certified, 2009)
- Vinification: Varieties are vinified separately, 100% de-stemmed, 8-10 day ambient yeast fermentation in stainless steel tanks with gentle daily punch-downs. Blended after malolactic fermentation. Aged for a maximum of 2 months. Cold filtered for 3 weeks. No added SO2.
