- Terroir: The two varieties are planted separately (with about 200 meters between them), but on the same terroir of volcanic rock (basalt), southeast-facing.
- Viticulture: Organic (AB, 2001) and Biodynamic (Demeter, 2009)
- Vinification: Varieties are vinified separately, 100% de-stemmed, 8-10 day ambient yeast fermentation in stainless steel tanks with gentle daily punch-downs, blended after malolactic fermentation, aged for a maximum of 2 months, cold settled for 3 weeks, no added SO2.
