• Vinification: 100% de-stemmed, 7-10 day ambient yeast fermentation in stainless steel tank with no added SO2. Aged for 3-6 months in stainless steel tank. Minimal SO2 added after malolactic fermentation and before bottling (approx. 15 ppm free SO2), filtered.
