    • Terroir: At the top of the slope in Juliénas, next to a prairie owned by Maï that she allows to flower through the end of summer, high altitude (480 meters), northeast-facing, granitic soil with lots of blue stones.
    • Viticulture: Organic (not certified), biodynamic methods, 7,000 vines/ha, no till, grass and melliferous cover crops.
    • Vinification: 100% whole cluster, 1.5-2-week maceration and ambient yeast fermentation, pressed before dry, aged for 9 months in used Chardonnay barrels (from 2014), no fining, no filtration, SO2 first added after malolactic conversion and again before bottling (35-50 ppm total).
