- Vinification: 0-20% whole-clusters, ambient yeast fermentation in oak tanks, limited foot or hand punch-downs (1 or 2 max.), pressed in small vertical press, one to two week settling in tank, aged for 12 months in 228L barrels (new only when it is necessary to replace a barrel), racked to stainless tanks for another 4 to 6 months aging, no fining, some filtration, bottled with DIAM closures.
Additional Info
The top of the Combe au Moine vineyard is one of the highest elevations for a 1er Cru in Burgundy. This altitude coupled with a north-eastern exposure, result in late-ripening grapes, and a wine with wonderful freshness.
