    • Vinification: Made in a reductive style, de-stemmed, ambient yeast fermentation and aging for 9 months on the skins in amphora, no extraction or pressing, aged for an additional 3 months in stainless steel, no fining, no filtration, minimal SO2 addition before bottling (5-10 ppm).
