    • Variety: Spätburgunder
    • Vine Age: Planted in the 1980s and 1990s
    • Terroir: From Ehrenstetten, on the hill of Ölberg, on a steep southeast-facing slope, surrounded by a nature reserve, sparse loess-loam soil over Jurassic limestone and marl.
    • Viticulture: Biodynamic (not certified), mostly planted with massale selections from France.
    • Vinification: Approx. 80% whole cluster, 2-week fermentation in tank, minimal extraction, 1 foot punch-down before pressing, aged for 18 months in used Burgundian barrels, no fining, no filtration, minimal SO2 addition before bottling (5-10 ppm).
